A “Start your day off right” pancake recipe.

In honor of today being National Pancake day (How many of you went to IHOP? How many of you made your own short stack?), I bring you my pancake recipe.

I know, everyone has their own favorite pancake recipe, and I’m no different. But, in case you want to try out my trusty old standby, here it is:

(I apologize for the uninspiring pancake photo. Totally took it on the fly! Trying to feed everyone and get Daniel out the door, on time, was no small feat.)

Andrea’s Trusty Pancake recipe

Pancakes 2
(Chocolate chip pancakes today!)

Place in a medium bowl:

3/4 cup milk

2 Tablespoons oil

1 egg

Add in dry ingredients:

1 cup flour

1/2 teaspoon salt

2 teaspoons baking powder

Mix lightly. Fry over medium heat in a lightly oiled (not butter!) pan. Smother hot pancakes in butter and pure maple syrup (or Aunt Jemima’s, if that’s what floats your boat!). Eat!

I always, always double the recipe. And that feeds my family of five nicely. I also use rice milk which makes the pancakes slightly less fluffy but ridiculously moist. Cow’s milk is perfect, though.

    Every day is National Pancake Day for my son. That’s what he wants every morning for breakfast. I found a super easy recipe online when he started this kick and I make up a batch and keep them in the fridge (I’m no morning person and he wants FOOD the second he’s awake). Dab a bit of syrup, pop it in the microwave for 10 seconds and he’s got breakfast! :)
    1 c flour
    1 c milk
    1 egg
    2 tsp baking powder
    1/2 tsp salt
    vanilla–i like vanilla, so I’m generous and never measure it:) I probably put in 2-3 tsp. Not fluffy but super delicious!

    ours is almost identical, except we add in a TBS of brown sugar – yum! and we’re at the triple it stage – the older the kids get, the more they eat!
